You know that eating more vegetables will improve your health, but vegetables are not always the tastiest foods on the planet. If you’ve been struggling to include more veggies in your meals because you’re not a big fan of their flavors, we have the perfect solution: dress them up with some raw honey from Hawaii.
Honey and veggies may sound like an unusual combination at first, but once you try one of these delicious recipes, you’ll be on board:
Citrus Honey Glazed Vegetables
This recipe is best made with yams, beets, carrots, and parsnips, but you can add some of your other favorite veggies if you desire. Slice up about 5 pounds of vegetables in total. Then, whisk together:
- 1/2 cup honey
- 2 tablespoon olive oil
- 1 tablespoon of orange juice
- 2 teaspoons grated orange zest
- salt and pepper to taste
Toss the veggies in the mixture, and spread them out on a baking sheet. Cover the sheet in foil, and roast for 35 minutes at 425 degrees F. Uncover, and roast for another 10 minutes. Yum!
Honey Roasted Butternut Squash
Even if you’re not a fan of squash, you’ll fall in love with this honey-sweetened dish. All you need is:
- 1 pound of butternut squash, peeled and cubed
- 2 tablespoons butter, melted
- 2 tablespoons raw honey from Hawaii
- 2 teaspoons fresh parsley, chopped
- salt and pepper to taste
Combine the last 4 ingredients in a mixing bowl, and whisk to combine. Add the squash, and toss it in the mixture to coat. Spread the squash out on a baking pan, and bake it for 30 – 40 minutes at 400 degrees F.
