Get a Taste of Hawaii With Pineapple Macadamia Nut Bread

Ingredients:

  • 2 c. flour
  • 1 1/2 tablespoons baking powder
  • 1/2 stick butter
  • 3/4 c. sugar, plus 1 1 teaspoon
  • 2 eggs, room temperature
  • 2/3 c. whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3/4 c. chopped pineapple, drained
  • 3/4 c. “Nuts in the Nude” plain macadamia nuts from Hawaii’s Local Buzz, chopped roughly

Directions

  1. Combine the flour, baking powder, nutmeg and salt in a bowl, and sift it into a second bowl to make sure all lumps have been removed.
  2. In a second large mixing bowl, beat the butter and sugar on medium speed until the mixture is fluffy. This will give your bread a delicate texture.
  3. Add the eggs, one at a time, to the butter and sugar mixture, beating well after each egg is added.
  4. Pour half of the flour mixture into the butter mixture, and mix well.
  5. Add the milk and the vanilla to the main mixture, and beat well before beating in the remaining flour mixture.
  6. Fold the pineapple and nuts into the bread batter.
  7. Pour the mixture into a greased and floured standard bread pan.
  8. Bake it at 350° F for 45 – 55 minutes, or until a knife inserted in the center comes out clean.
  9. Let cool for 10 minutes before removing from the pan by inverting it onto a cooling tray.
  10. Cool completely before slicing and serving.
